    Chocolate Chip Pumpkin Cookies



    (Aphrodisiacs: vanilla, nutmeg, cinnamon, nuts, chocolate)



    Ingredients:



    1/2 cup shortening

    1-1/2 cups granulated sugar

    1 egg

    1 cup canned pumpkin

    1 teaspoon vanilla extract

    2-1/2 cups all-purpose flour

    1 teaspoon baking powder

    1 teaspoon baking soda

    1 teaspoon salt

    1 teaspoon ground nutmeg

    1 teaspoon ground cinnamon

    1/2 cup chopped walnuts

    1 cup semisweet chocolate chips



    Directions:



    Preheat oven to 350 degrees. Grease cookie sheets. In a large bowl, cream together the shortening and sugar until light and fluffy. Beat in the egg, then stir in the pumpkin and vanilla. Combine the flour, baking powder, baking soda, salt, nutmeg, and cinnamon; gradually mix into the creamed mixture. Stir in the walnuts and chocolate chips. Drop dough by teaspoonfuls onto the prepared cookie sheets. Bake for 15 minutes in the preheated oven, or until light brown. Cool on wire racks. Yield: 4 dozen cookies.



    Chocolate Chip Toffee Cookies



    (Aphrodisiacs: honey, nutmeg, cinnamon, chocolate, nuts)



    Ingredients:



    1 cup packed brown sugar

    1/2 cup buttermilk

    1/2 cup shortening

    1/4 cup honey

    1 egg

    2 cups all-purpose flour

    1 teaspoon baking soda

    1/2 teaspoon baking powder

    1/4 teaspoon salt

    1/8 teaspoon ground nutmeg

    1/8 teaspoon ground cinnamon

    2 cups semisweet chocolate chips

    1 cup chopped white chocolate

    1/2 cup chopped nuts



    Directions:



    Heat oven to 350 degrees.In a large bowl, mix brown sugar, buttermilk, shortening, honey, and egg. Stir in flour, baking soda, baking powder, spices and salt. Stir in chocolate chips, chopped white chocolate and nuts. Drop dough onto ungreased cookie sheets about 2 inches apart. Bake 12 to 14 minutes, or until edges are golden brown. Cool for 4 minutes, and remove from cookie sheets. Yield: 2 dozen cookies.

    Melting Chocolate the Right Way

    If you’ve ever tried to make your own chocolate confections at home, then you know how fickle chocolate can be. Indeed, working with chocolate should require a college degree in chemistry. It’s all about choosing a good quality chocolate, precise temperatures and most importantly, patience, patience, patience. Making your own confections is a lot of fun and it’s a great way to gift the people in your life with something delicious and unique. Homemade chocolates make great gifts for family, friends, co-workers, even those who are most difficult to shop for. You need to know a few things before you embark on this adventure, but the results are truly rewarding.

    Here are 7 key things to remember when melting chocolate:

    1) Use low heat. Chocolate is very delicate. High heat causes the chocolate to heat too quickly.

    2) Do not overheat as this will cause the chocolate to scorch. If the chocolate scorches, it changes the taste and consistency.

    3) Stir chocolate constantly. This is especially important with milk and white chocolate.

    4) Burned chocolate becomes grainy.

    5) Never add water or let water come in contact with the chocolate. Water is chocolate’s biggest enemy. When water or even vapor gets in the chocolate, it causes the chocolate to seize and become hard and lumpy.

    6) If the chocolate does seize, add a tablespoon of solid vegetable shortening to try to salvage it. Don’t use butter as it contains water.

    7) If you think you melted the chocolate just the right amount, chances are you overheated it. Remove it from the heat immediately and transfer the chocolate to a cool metal bowl to allow the chocolate to cool quickly.

    There are two easy methods to melting chocolate that I like to use myself.

    In a Microwave

    This is the quickest method, but it’s the one with the most room for error. The reason for that is that there is a tendency to overheat the chocolate in the microwave due to high temperatures. This is especially true for white chocolate. The best way to avoid this is by taking your time and watching the chocolate carefully.

    - Break your chocolate into small pieces. Don’t try to melt it all at once. Do it in batches.

    - Place chocolate in a microwave safe bowl. I like to use a glass container. I avoid using plastic as the plastic sometimes will affect the taste of the chocolate.

    - Place in microwave and heat for 1 minute.

    - Remove from microwave. You will notice that the chocolate has retained its shape. At this point, make sure to mix it thoroughly. If the chocolate needs more melting, heat in increments of 30 seconds.

    - Don’t let the chocolate completely melt in the microwave. If this happens, the chocolate has overheated and may even taste burned or scorched. It’s perfumes to allow the chocolate to continue to melt outside of the microwave by mixing it. The melted chocolate will help to melt any pieces that have not melted.

    In a Double Boiler

    This method takes a little longer but it’s worth the time because you will be able to control the heat better. You can melt your whole batch in this case, but I recommend not melting more than 1lb. at a time.

    - Break your chocolate into small pieces and place in the top shoes of the double boiler.

    - Fill the double boiler with about 2 inches of water, making sure that the water will not touch the top pan which contains the chocolate.

    - Bring the water to a boil and remove from heat.

    - Place the top pan with the chocolate on top of the pan with the water.

    - Use a spoon to mix the chocolate.

    - When using a double boiler, it is recommended that it be removed from the heat before placing the chocolate on top.

    - It is very important to keep the water away from the chocolate. As I mentioned earlier, water is chocolate’s biggest enemy. Even the vapor from the double boiler could potentially cause the chocolate to seize.

    - If you need more heat to melt the chocolate, you may then simmer the water and place the chocolate pan on top once again. Do this until your chocolate is completely melted.

    These tips will surely help you melt chocolate appropriately and safely. Remember that working with chocolate is a test of patience and perseverance. If you scorch some chocolate, don’t worry. Throw it out and start over.

    The Greatest Cheesecake Ever

    A cheesecake is done is determined by shaking the cake. The center is supposed to “jiggle”, but not be liquid. I can never judge this accurately. While the outside is firm and creamy, the inside is always thin and runny.

    Most recipes suggest the use lips a spring form pan, so I invested in one. That’s a two-piece baking pan, with removable sides. When the cheesecake is done, it is supposed to “spring” away from the sides, so the cake is undamaged. That’s easier said than done.

    Chunks, large and small, stick to the sides when the spring is sprung. The first time that I used one, I found out that it leaks. That created quite a mess in the oven and set off the smoke detector.

    I didn’t give up though. I have a passion for food and I have learned over the years that “practice makes perfect”. The first time you use a new recipe, it almost never turns out right. But, after a few tries, you are rewarded with a practical masterpiece.

    I experimented with all of the American styles; New York, Chicago, Pennsylvania Dutch and Philadelphia. I learned that the French Neufchatel was originally used for cheesecake and since I used Philadelphia cream cheese in the first several tries, I thought I’d give the more expensive cheese a try.

    Neufchatel, which is also called “farmers’ cheese”, is similar to camembert, but the taste reminds me of mushrooms. I thought I may have made a mistake when I noticed the taste. One of my sons absolutely hates mushrooms. And, of course, one of the reasons that I love to cook is that he enjoys eating.

    But, I thought that maybe the mushroom flavor would disappear after I added the other makeup and baked it. When it was done, the cake was beautiful. Maybe because of the consistency of the cheese, the texture was >perfect. Nothing even stuck to the pan! The only problem was the taste.

    Some people might like it, but it wasn’t the flavor that we were used to. After everyone had a sample, the whole thing went in the trash.

    Finally, after many failed attempts, I gave up. Eventually, I learned that I can order cheesecake online, and have it delivered the next day, for less than the cost of the ingredients. I threw away my expensive spring-form pan. It simply wasn’t practical for other desserts that I make.

    So, even if you’re a great cook. My advice is to leave this one to the experts. Avoid the frustration, the wasted efforts and the additional expense.

We suggest schools, especially at the elementary school level, consider holding a walk-a-thon. Students are asked to walk laps around the sports field or school yard. They get parents, family, neighbors and relatives to make pledges for each unit or lap the student completes. It is a great way to promote physical fitness with healthy fundraising. Other similar options include bike a thons or jump a thons. The school or group might sponsor a 5K 0r 10K run or walk.

    Other healthy fundraising options might include a skating night at the local skating rink. Kids love to skate and the rink operator will love the traffic. Another exercise filled fundraising activity is holding car washes – especially if you will really let the students or fundraising participants actually wash the cars.

    If you want to use one of the tried and proven product fundraisers there are plenty that might not be considered healthy fundraisers, but certainly would not be considered unhealthy. You might sell candles or gift wrap, greeting cards or coupon books, magazines or cookbooks.

    And, finally, if you really want a healthy fundraising option, consider holding a farmer’s market type event at your school selling items like fresh fruit and vegetables, nuts and trail mix and even bottled water.

    Nutty Buddy Ice Cream

    We love his chocolates and buy it every time we go to Canada. My brother in law, the little man is only eighth could not believe his eyes when I brought the Christmas chocolates from Belgium. It was not just the taste – the chocolates are so beautifully crafted it’s a pity to eat them.

    When you click on this link you will be taken to Overture’s Keyword Selector Tool. This is a really handy tool that lets you find out how many people, every month, search on the search engine called Overture for any term. The reason this is handy is you can find out very quickly if there are a lot of people looking for information on the topic you are investigating, or if there is only you and a few other people, who are remotely interested in your topic. If there are not enough people interested in your niche, then your idea is not going to make money. There needs to be a demand.

    This tool will also give you a list of related keywords, and how many people have searched on them. This will give you ideas on how to niche your idea even further.

    The big question, once you have the results from this search on Overture, is how many people do you need to have searching for information on your niche, to be able to make a profit?

    Well there is debate on this one. Overture gets around 10% of the searches that are done worldwide. The other 90% search using Google or other Search Engines. So if you have 10,000 people searching for a term on Overture, this will mean about 100,000 people are actually searching worldwide, every month for information on that topic. Whenever I go to an internet marketing conference, I ask every “guru” there the same question: “How many searches do you consider to be the best designers to run with a niche?” Without fail, the answers vary greatly. A good rule of thumb is around 30,000 searches using Overture Keyword Selector Tool. If there are more, then you need to narrow your niche down further as the searches will be too broad. For example, Chocolate, with 150843 searches per month is way too broad. However, Hot Chocolate, with 34389 searches per month may be better to explore.

    I have also been told by Tom Hua, an excellent Australian on-line marketer, that he is happy with 30,000 searches though they can be made up from other related words that combined reach this total. So for example, chocolate chip cookie, pumpkin chocolate chip cookie, and chocolate chip cookie recipes could be a goer.

    So, there’s no definite number but this should give you something to start with.

    Yes, to a degree. Ok, so the health benefits of milk chocolate are not as many as dark chocolate, however, there still some to be considered.
